Tecnoeka Millenial Black Mask Bakery 6× 600×400 mm electric combi-steam oven is a modern, efficient and reliable device - ideal for virtually all cooking and baking applications. It ensures even heat distribution thanks to the fans and excellent humidification thanks to the steam function. Electronic control allows very precise setting of the desired cooking parameters. The 7-inch color touch screen allows you to set all parameters and functions numerically or using icons. The oven is programmable, which allows you to save 100 programs (recipes), up to 10 steps in each. Cooking/baking takes place in 3 modes: convection, steam, convection-steam (combi). The casing and the chamber are made of AISI 304 stainless steel. The embossed chamber has rounded corners, which makes it easier to clean. Doors with a lock when opening at 60 deg, 90 deg, 120 deg, 180 deg ensure safety during work. The doors are glazed, double-layered and gravity-ventilated. They have hinges on the right side. It is possible to order the stove with hinges on the opposite side. A drip tray with drain in the door prevents condensation from dripping. 2 fans with auto-reverse have 3 speeds (min. 1500 rpm, max. 2800 rpm). The 1-point probe ensures constant control of baking and cooking parameters. Adjustable legs enable perfect leveling of the stove, which is necessary for proper operation of the device. Cooking using the DELTA Tfunction means cooking with a temperature probe, maintaining a constant difference between the temperature inside the product and the oven temperature, which helps avoid too high temperatures affecting the product.

The device has additional functions such as:

- Multilevel: cooking different dishes in the same conditions, with different thermal processing times,

- Cooldown: quick cooling of the oven chamber in order to start the next cooking process, but requiring a much lower temperature.

- Pre-heating: pre-heating the chamber by +30˚C more than the set temperature,

- Holding Cabinet: keeping cooked dishes at a temperature serving,

- Proofer: the oven serves as a proofing chamber.

Tecnoek's patented systems:

- Airflowlogictrade: redesigned deflector to improve air circulation. This enables even baking on every level.

- Humilogictrade: water injection from behind the fan ensuring high humidity levels with reduced water use. It not only reduces water consumption, but also allows you to better extract the natural flavor and aroma from the dishes.
