The Yanagi Sashimi knife by Ambrogio Sanelli will work well for preparing sushi or sashimi. Hasaki means "cutting edge" in Japanese, hence it perfectly expresses the name for a professional knife line in Japanese style. The blades are made of specially modified NITRO-B stainless steel (X50CrMoVN15 / AISI440B), in which the addition of nitrogen molecules significantly improves the anti-corrosion properties and hardness after thermal improvement. The knife hardness is 57-58 HRC. According to Japanese technique, the knives are sharpened unilaterally so that the food comes into contact with the blade only for a moment, which reduces the occurrence of friction to a minimum. Perfectly balanced and comfortable riveted handles are made of synthetic POM resin.
