Hasaki means "cutting edge" in Japanese, hence the perfect name for a professional line of Japanese-style knives. The knife blades are made of specially modified NITRO-B (X50CrMoVN15 / AISI440B) stainless steel, in which the addition of nitrogen particles significantly improves anti-corrosion properties and hardness after heat treatment. The hardness of the knife is 57-58 HRC. According to the Japanese technique, knives are sharpened on one side, so that the food comes into contact with the blade only for a moment, which reduces friction to a minimum. Perfectly balanced and comfortable riveted handles are made of synthetic POM resin. Do not wash in dishwashers.
